Grilled Veggie Salad

Summa summa summa time! I LOVE grilling during the summer...the two just go hand-in-hand. Like a nice, sweet, refreshing glass of reisling while watching the sunset. Ugh...how I miss wine! Since finally buying our grill during MDW, we've done quite a bit of outdoor cooking ourselves; from burgers to fish, kabobs and even peaches. Yes, peaches! Have you ever had a grilled peach with cinnamon, honey, and vanilla ice cream? Delicious! 

I'm a big fan of grilling vegetables, but they can get monotonous after a few meals, and having recently been "diagnosed" with borderline gestational diabetes (the fun just doesn't end with this pregnancy, y'all), I need to get creative with cooking vegetables so I don't get bored and head straight for pasta. Now, I'm also a big fan of The Ivy's Grilled Vegetable Salad. Most of the ingredients are easy to figure out...zucchini, asparagus, tomatoes, etc., but the most important part to any salad is the dressing. I have no idea what kind of dressing they use, so I had to refer to google. The first result was from popsugar.com recreating Gwyneth Paltrow's version of this yummy salad. I mean, if it's good enough for Gwyneth, it's good enough for me. Thankfully I had all of the dressing ingredients in my pantry, score!

So while my corn, zucchini, and avocado were out on the grill, I whipped up the simple vinaigrette in a matter of seconds. My first taste was that it was too sweet. I generally like a more acidic, tart dressing (just my preference), so I added a bit more lemon juice. Once all the veggies were cooked, I combined everything into a large bowl, poured over the vinaigrette, and added some yummy cheese (have I ever mentioned how much I heart fromage??). 

This salad was so satisfying, I especially loved the sweetness from the grilled corn and the smoky creaminess of the avocado. Mmmmm. Thankfully I have some extra left over for tomorrow's lunch :)
